14° C dough temperature throughout the year !
Yarrows Family Bakers is one of the last and largest remaining independently owned bakeries in New Zealand.
The state of the art Manaia bakery operates 24 hours a day, seven days a week, supplying an extensive range of breads, specialty breads, rolls, croissants, gourmet cookies and other quality bakery products to leading supermarkets, retailers and food companies throughout New Zealand and around the globe.
Pioneers in the manufacture of frozen dough products, one the technical challenges was to maintain dough temperatures to 14°C. Yarrows contracted Ziegra to automatically dose the ice into their several dough mixers.
The solution consists of 2 x UBE StreamIce machines with 1 x SIB-F 450 silo. Together associated with the pumps and flow metering circuits, the system enables to deliver 24,000 l StreamIce® / 24h to four mixing lines and over distance of up to 100 m !
The ice ratio is 28 % + 72 % water. The water dispenses at 0°C and the ice at -0,5°C.
